BAKED FILLED PASTRY THAT CONNECTS SERBS, ALBANIANS AND ROMA
Bujanovac - Serbs, Albanians and Roma are regular visitors of the “Bis” bakery in Bujanovac, and as the bakery’s owners say, "No minister who has come to Bujanovac failed to try their baked filled pastry".
“Dobar dan” and “Mirdita” are said countless times during the day at the small bakery. Serbs, Albanians and Roma agree that the baked filled pastry at Isa’s place is best in the area and that it has no equal.
“This is a sort of family business. My father Isa and his buddy have been making and selling baked filled pastry in Bujanovac for 17 years. At the moment, my cousin and I are working and serving the customers," says Dzdan Sarda.
He smiles when he says that Isa’s baked filled pastry is the best even when it hasn’t been made by Isa.
“There is no particular secret about it. It is a family recipe of us, the Gorani. We make it with a lot of love and it is important that it is always fresh”, says Dzdan.
One of the customers says that he has been dropping in the bakery for the last seven years, whenever he comes to Bujanovac on business. If he has no time to eat it at the bakery, he takes it away and enjoys his favorite dish at home in Vranje.
“We don’t discriminate between our customers. Our baked filled pastry speaks Serbian, Albanian and Roma, and if necessary, it can speak some Italian and German, too", says Dzdan.
He says that there is no minister who visited Bujanovac and didn’t try their baked filled pastry. They, thereafter, keep returning to our bakery. Ambassadors of foreign countries also have a weak spot for our leafy cheese, meat and vegetable pies.
“People from the municipality come to our bakery and ask for our baked filled pastry for a specific minister or ambassador, so that we wrap the staff up and deliver it. When asked whether they pay the same price, Dzdan replies:"Everyone pays the same price".
Dždan says that one can live on making pies, but can’t live luxuriously.
